- 300 gr. smoked salmon;
- a zucchini;
- two carrots
- salad lettuce;
- juice of half a lemon;
- 4 anchovy fillets;
- a small bunch of parsley;
- a clove of garlic;
- a tablespoon salted capers,
- EVO oil to taste;
prepare the base of the dish with lettuce clean. Cut the zucchini into thin strips and carrots (I use a potato peeler to get nice thin and then cut into strips with a knife). In a pot boil water and a little salt and pour the vegetables for a few seconds (not more than ten seconds). Drain and when cool twist spaghetti squash and carrots as if they were training more piles to be placed in the pot over the salad.
Now prepare the sauce, whisking the anchovies, capers after being rinsed thoroughly, the garlic, parsley, lemon juice and oil EVO enough to have a creamy sauce. Place the salmon on a plate and drizzle with the sauce. Bon appetit! Denise
